The smell of these chocolate chip cornflake
cookies baking in the oven is intoxicating.
Thank goodness they only take about 10
minutes to bake, five minutes to cool and
then you can munch away.
I ALWAYS USE DARK,
CHIPS IN BAKING AS I
FIND MILK CHOCOLATE
CAN BE TOO SWEET.
1. Preheat oven to 350F (180C). Line a flat baking sheet with baking paper.
2. Cream the butter, sugar and vanilla in a mixing bowl until pale and
creamy. Add the sifted flour and baking soda.
3. Mix until just combined. Add milk and stir dough with a wooden
spoon until it comes together. Use a metal spoon to stir in the
chocolate chips followed by the cornflakes.
4. Roll tablespoonfuls of mixture into balls. Place balls on baking paper
with enough room for spreading. Flatten balls slightly with a spatula.
5. Bake cookies for 10 to 12 minutes or until light golden. Transfer to a wire
cooking rack to cool completely. Repeat with remaining cookie mixture.
1/2 cup of butter at room

1 tsp. vanilla essence
1 1/4 cups of all-purpose flour, sifted
1/2 tsp. baking powder
2 Tbsp. milk
1/2 cup of dark, chocolate chips
1 1/2 cups cornflake

Race's future uncertain
Team race: New Brighton Olympic Athletics Club members compete
in the 2013 Lionel Fox Relay.
Whether you are an elite athlete
or a recreational runner, the
annual New Balance 15
kilometre road race and 10km
walk, being held on Saturday,
May 11, is an event
Now in its 34th year, this
fixture is a fundraiser for the
New Brighton Olympic Athletic
Club and is held on a scenic,
two-lap course, starting and
finishing at Greenpark Domain.
''The event is suitable for all
grades of runners and as it is
held before the Christchurch
Marathon in June, it's a really
good warm-up or stepping
stone to that,'' club president
Margaret Flanagan said.
The race was originally held in
Tai Tapu, but the earthquakes
forced the club to move the
event to Greenpark in 2001. It is
actively supported by the local
community and school.
However, with the school due
to close at the end of 2013, the
club must find a new venue
after this year's race.
''It's a real shame,'' race
director Alex Cook said.
''The Greenpark School and
community, together with our
main sponsors, New Balance
and SBS bank, have helped us to
keep this long-standing race on
the calendar. The quiet roads
also kept safety concerns to a
minimum and gave the race a
real country feel.''
Alex says that as they have
received so much positive
feedback about the race over
the years, they will do what they
can to ensure it continues.
The New Brighton Olympic
Athletic Club is an amalgam-
ation of two long-established
clubs, which joined forces three
With clubrooms at the
Rawhiti Domain, it has
competitive members who
range in age from 6 to 80 years.
Ms Flanagan says the club
would really like to get more
''Over summer, we have
about 130 children competing
in track and field, but in the
winter, we have considerably
fewer, due to other sports, so it's
mainly just adults.''
Many athletes who have
competed internationally have
been previous members of both
clubs, including successful
triathlete Andrea Hewitt.
Ms Flanagan says that being a
member of the New Brighton
club offers a broad range of
benefits to athletes -- physically,
psychologically, and socially.
